I am a huge fan of black bean burgers. Simple, quick, easy to prepare, healthier than other options but have you seem the price these days?! Unless I have a coupon and they are on sale it is rare that I am purchasing them from the frozen foods section of my grocery store. A 4 pack of black bean burger patties will conservatively cost me $4.25. That is not how this penny pincher wants to spend her pennies! Here is my tutorial on how I make my black bean burger for about $.25 a piece.
Ingredients:
- 1 can 15 oz. Black Beans ($.50)
- 1 large egg ($.11)
- 2 Tablespoons of your favorite salsa. ($.20 but hopefully you made some yourself this summer.) No? Come check out my tutorial HERE for salsa verde and give it a try. It is simple.
- 1/3-1/2 c crushed pretzels ($.20)
- Yields 4 patties
- Rinse and drain the beans.
- Transfer to a bowl and start mashing the beans with the tines of a fork.
- Add a large egg.
- Stir to incorporate.
- Add 2 tablespoons of your favorite salsa.
- Stir to incorporate.
- Add 1/3 – 1/2 cups crushed pretzels. Allow the mixture to rest for a few minutes to absorb the moisture of the egg and the salsa. Adjust depending on the moisture level of the salsa.
- Divide the mixture into 4 equal portions and form into patties.
- Using 1 teaspoon of peanut oil (or frying oil of your choice) in a non stick skillet, pan sear them on each side for 2 minutes per side or until cooked through.

How do you take your black bean burger?
** Snyders of Hanover was mentioned in the video but How I Pinch A Penny has not been compensated in any way for the mention. I simply love the pretzels and has them in the house when the video was filmed.
